How To Customize Existing Web Photo Gallery?

i copied 1 of existing web photo galleries (simple - vertical thumbnails) , have customized it. i'm needing change options within web photo gallery dialogue box. under "general" i'm needing have "use utf 8 encoding" checked, under "large images" need resize images: unchecked, , forth.

where these setting located?
